Blogtoberfest - Day 11 - Lamingtons

My son wanted to buy a coconut and make lamingtons. I tried to convince him that using desiccated coconut would be far easier. Alas no, he wanted to taste coconut milk and use the flesh of a coconut. Sigh.... I gave in.....what was I thinking....

LAMINGTONS


1 1/2 cups self-raising flour
1/3 cup cornflour
185g butter, softened
1 cup caster sugar
2 tsp vanilla essence
3 eggs, lightly beaten
1/2 cup milk
3/4 cup thick cream

Icing

4 cups icing sugar
1/3 cup cocoa powder
30g butter, melted
2/3 cup milk, extra
3 cups of desiccated coconut OR a real coconut

AND

1 manly man to open the coconut
1 Hammer

1. Preheat oven 180C, Bush a shallow 23ch square cake tin with melted butter or oil. Line base and sides with baking paper. Sift flour and cornflour into large bowl. Add butter, sugar, essence, eggs and milk.

2. Electric beaters, beat on low speed 1 minute or until ingredients are just moistened. Beat mixture on high for 2 minutes or until mixture is free of lumps and increased in volume. Pour mixture into prepared tin; smooth surface. Bake 1 hour or until skewer comes out clean. Leave cake in tin for 3 minutes before turning onto wire rack to cool.

3. Trim cake until flat. Cut cake into 25 squares.

4. Icing: Sift icing sugar with cocoa. Combine with butter and milk in medium heatproof bowl. Stand bowl over pan of simmering water, stirring until icing is smooth and glossy.

4a. Grate coconut or use desiccated coconut.

Place coconut on plate or bowl. Dip cake in icing then into the coconut. Enjoy.

  2. YUM!!! i love lamingtons! only I find they are such a lot of work. Yours look very delicious
