Plum Jam

My mum has this great plum tree in her backyard. She kindly gave me a few, well actually more than a few. Plenty of plums! I decided I wanted to make plum jam. This is a first for me, and I am glad to report that it was a success. My son and husband loved it. They ate plenty of warm jam on bread. Yum. Now what do to with the rest of the plums and seeds!
Plum Jam

1.25kg plums
1 large Granny Smith apple
1.25kg sugar
1 3/4 cups of water
juice 1 lemon

  1. Wash, halve and stone plums. Wash, core and finely chop the apple.
  2. Combine plums, apple, 1 1/2 cups of the sgar and water. Cool gently, stirring occasionally until plums and apple are tender. Warm remaining sugar. Bring plums to the boil, add the warmed sugar and stir until dissolved. Add lemon juice and boil rapidly, stirring occasionally until fruit gels when tested, about 1 hour.
  3. Ladle into warm, sterilised jars and seal. When cool, label and date.
